“The Jackdaw”
Jackdaw or jac-do in Welsh, is the nickname given to a person born within the walls of Conwy town. The name is taken from the bird which can be found nesting in the walls of the town and castle.

Nick was born in 1994, raised in Llandudno, North Wales. His catering career started locally at Llandrillo College in Rhos on Sea. During his three years at college, he took on many different job roles in the area to progress his knowledge and skills.
From college Nick was lucky enough to stage at Heston Blumenthal’s Three Michelin Starred The Fat Duck, during his time he learnt a wealth of knowledge, and from a stage was then fortunate to secure a permanent position as Commis Chef at the age of 19.
Progressing through the ranks at The Fat Duck, from Commis to eventually Junior Sous Chef and stopping off for an 8 month relocation to Melbourne during the time, fast forward to 2021 and everything changes with the world goes into yet another lockdown.
Nick saw this as an opportunity. Using the time he had during the past 2020 lockdowns he came up with the idea and concept for ‘The Jackdaw’, admittedly starting off not quite how he planned with ‘The Jackdaw At Home’… to their delight from his parents kitchen. ‘The Jackdaw At Home’ was a finish at home delivery box service, which was a tremendous success, which then allowed ‘The Jackdaw’ to happen.
Fast forward to 7th October 2021, the very first service at The Jackdaw.
Now in 2024 and just over 2 years old, here at The Jackdaw we are very much learning every day. Making the switch to Tasting Menu only in May 2023, we serve a 9 course Tasting Menu, taking inspiration from Wales, Nick’s past, the surrounding landscape, culture, arts, history, ingredients and heritage of Wales.
